When it comes to serving caviar, the plate you choose matters more than you think. Ceramic, glass, metal, and MOP— each material affects the caviars flavor, temperature, and presentation differently. As someone who is tested them all, I am breaking down the pros and cons to help you decide which is best for your needs.
Let us start with metal plates (silver, gold, stainless steel). Metal is a big no-no for caviar. It reacts with the caviars natural oils, adding a metallic aftertaste that masks its delicate flavor. I once served caviar on a silver platter at a dinner party, and a guest joked, “This tastes like I am eating fish out of a tin can.” Silver is especially bad— its high reactivity ruins even premium caviar. Save metal plates for serving other foods; they have no place near caviar.
Glass plates are a step up from metal, but they are not perfect. Glass is inert, so it does not alter the flavor, which is good. But glass is a poor insulator— it warms up quickly, which can cause the caviar to lose its chill. MOP caviar plates are the clear winner. They are inert, so they do not interfere with the caviars flavor. Their natural coolness keeps the caviar chilled longer, preserving its texture and taste. MOPs iridescent surface also makes the caviar look more luxurious— it is the perfect backdrop for showcasing the roes glossy color. Unlike glass or ceramic, MOP is eco-friendly (most are made from repurposed oyster shells) and durable with proper care.
Another bonus: MOP plates are versatile. They work with all types of caviar, from affordable salmon roe to luxury Beluga. They are also perfect for serving other delicate foods, like oysters, uni, or even fruit compote. I use my MOP plate for more than just caviar— it is my go-to for any food where I want to preserve the flavor and add a touch of elegance.
The only downside to MOP plates is that they are not dishwasher-safe (hand-wash only) and can chip if dropped. But these are minor inconveniences compared to the flavor and presentation benefits. If you are serious about caviar, MOP is the way to go.
